The high nutritional content in catfish oil can be a rich source of omega-3 fatty acids, which function the development child's brain. However, acid causes fish to become more susceptible oxidation during storage process, prevented by adding antioxidants. This study aims determine quality after ginger as an antioxidant. method used is titration peroxide value and number free acids. results obtained for with addition on days 0, 7, 14 were 1.58 meq/kg, 2.11 meq/kg. values added 0.57%, 0.58%, 2.11%, respectively.
